  • Potatoes – 4-6 pcs.
  • Breadcrumbs – ¼ cup
  • Salt – a pinch
  • Freshly ground black pepper – ¼ tsp.
  • Spices – to taste

For gremolata:

  • Parsley – 4-5 branches
  • Mint – 3-4 sprigs
  • Garlic – 1 clove
  • A small spicy chili pepper (optional) – 1 pcs
  • Lemon Zest – 1 tsp.
  • Olive oil – 1/4 tbsp.
  • Large salt – ¼ tsp
  • Freshly ground black pepper – ¼ tsp.

Oven baked Potatoes with Gremolata – Preparation:

  • Make gremolata. Finely chop the parsley, mint and garlic.
  • Cut the chili into small cubes. Rub lemon zest.
  • Mix together greens, zest, garlic and chili. Add salt and ground pepper.
  • Wash and boil the potatoes for 10 minutes, drain the water and cool it down.
  • Heat the oven to a temperature at 200 ° C.
  • Cover the baking sheet with baking paper.

  • Ground black pepper – ¼ tsp.
  • Fenugreek seeds – ½ tsp.
  • Mustard seeds – ½ tsp.
  • Dill – 2-3 sprigs.
  • Green onions  – a bunch.
  • Vegetable oil – 2-3 tbsp.

  • Wash, peel and cut the potatoes into large slices.
  • Sprinkle with spices (dill and green onions leave for serving), salt. Sprinkle with oil and mix.
  • Put in a greased or parchment-covered baking dish and bake in the oven at 220 ° C.
  • Stir potatoes occasionally for a uniform browning.
